Whether you are dipping fresh fish ‘n chips, french fries, or chicken tenders in this mayo, you will have a REALLY hard time going back to your regular bottled mayo after trying this recipe out! Top your favorite burger or sandwich with a dollop, or even garnish your favorite soup with a dash of this to make your dish POP!
Ingredients
1/4 cup low-fat mayonnaise
1/4 cup greek yogurt
1 teaspoon paprika
1 teaspoon parsley (fresh chopped or dry)
1 teaspoon dill
1/2 teaspoon thyme
2 garlic cloves, minced
1 tablespoon brown sugar
1 tablespoon lemon juice
Kosher salt, to taste
freshly cracked black pepper, to taste
1/2 teaspoon chili powder or chipotle powder (optional)
a pinch of saffron threads
Directions
Place saffron in a small bowl with a little hot water (1-2 tablespoons). Let it steep.
Now place all ingredients in a bowl (saffron+water included) and using a fork or whisk, incorporate all components evenly. Taste and adjust seasoning. Can be made up to 3 days ahead and kept in a tightly sealed container in the fridge.
