Roasted Pumpkin Seeds

Why waste the beautiful seeds that come out of our Halloween pumpkins every year? Create a delicious, healthy snack out of pumpkin seeds! Only 4 ingredients and an oven needed! 🙂

Ingredients
2 cups raw whole pumpkin seeds, cleaned and dried
2 teaspoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon cayenne powder

Directions

Preheat oven to 300 degrees F (150 degrees C).

Toss seeds in a bowl with the melted butter, garlic salt, and cayenne powder (or chili powder). Spread the seeds in a single layer on parchment paper lined baking sheet and bake for about 1 hour 15 minutes, or until golden brown; stir occasionally during the roasting process for even browning.

Serve hot and sprinkle Kosher salt on top, as desired. You can also sprinkle a little sugar on top for a sweet-savory flavor when they are still warm!

  1. The seeds are not shelled? Interesting. We used to do it with musk melon seeds, but then we would shell ( is that the word? ) and that was such a difficult task and then do something like this

    • Hi Radha – there is no need to shell the seed. Melon seeds are a little different, but these are delicious as is! They become crispy and are also a great addition into dishes like homemade granola (or even a topping on a hot tomato soup!).
