2 cups of cooked quinoa (according to package directions), cooled
1/2 cup tomato, chopped
1/2 cup cucumber, peeled and chopped
1/4 cup kalamata olives, halved
1/2 cup cubed (or broken up) feta cheese
1/2 cup sliced red onion (or finely diced)
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
Kosher salt, to taste
freshly cracked black pepper, to taste
In a medium bowl, combine all of the ingredients and serve! Can be made ahead and refrigerated for up to 2 days.
