Crispy Parmesan Crisps

These are so easy and can be made with a few days-old bread that you don’t know what to do with (although this recipe is great with fresh bread too).

Feel free to adjust the salt to more or less, depending on your taste. Remember that depending on your choice of cheese, you may need to decrease the salt if you use a salty cheese like parmesan or comte!

Great as an appetizer with a dip, or even just by itself. The cheesy, crispy, deliciousness of these is to die for!!

1/2 loaf of bread, whole grain is delicious (but any kind or size works!)
3 tablespoons garlic olive oil (or extra-virgin olive oil)
1 cup grated Parmesan, (or any hard cheese, white or yellow)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper


Preheat the oven to 425 degrees F.

Thinly slice the baguette (as thinly as you can) while trying to keep all pieces the same thickness so that they crisp evenly.

Place the rounds on a foil-lined baking sheet and drizzle the oil on them.

Sprinkle the salt and pepper on each piece, and then top with the grated cheese.

Bake them for 10 minutes in the middle rack, or until the cheese has melted and they are crispy.

Serve hot!

Tasty accompaniments: hummus, artichoke dip, tomato salsa, 7-layer dip, or top with a chicken salad for a meal!
